Organic whole grain rye flour, or whole grain rye flour, is made from whole grains of organic rye, along with the shell (bran) and germ. As a result, this flour contains the same amount of vitamins, minerals, nutrients and fiber as whole organic rye grains. For a long time, rye flour was used only for industrial baking of black bread. However, today it is increasingly appearing in the home kitchen - you can make cookies, pancakes, pancakes, pies, tortillas and other goodies from it. Usually, high-grade wheat flour is added to rye flour, as rye flour contains less gluten, which affects its baking properties.

The composition of rye flour is rich in vitamins E, PP, as well as vitamins of group B. It contains one and a half times more iron than bread made from premium wheat flour and 50% more magnesium and potassium. Moreover, rye is rich in the most valuable substance - fiber, which helps the body to get rid of toxins and toxins.

Rye flour recipes:

Rye brownies with rosemary

  • 170g unsalted organic butter
  • 170 g dark chocolate
  • 70 g whole grain rye flour
  • 3 tbsp. l. cocoa powder
  • ¾ h. L. baking powder
  • 1 tsp salt
  • 3 large chicken eggs
  • 170 g cane sugar
  • 100 g walnuts
  • 1 tbsp. l. chopped rosemary
  • 2 tsp vanilla sugar

In a water bath, melt the chocolate and butter, add all the salt and half the sugar. Then let the mixture cool slightly. Combine rye flour, baking powder and chopped rosemary in a large bowl. In a medium bowl, beat the eggs, remaining sugar and vanilla until smooth. Add the chilled chocolate mixture to the egg and stir well. Then add the flour mixture and stir gently until completely smooth. Add walnuts. Pour the dough into a baking dish and smooth the surface with a spatula. Bake brownies at 160 degrees for 20-25 minutes. Check readiness 5 minutes before the indicated time. The brownie surface should be shiny, the center slightly soft and a toothpick stuck in the center should come out with a few damp dough crumbs. Be careful not to dry out the brownie. Allow the brownie to cool slightly before removing it from the mold and cutting.

Rye bread with dried fruits in a bread maker

  • 1 tsp dry yeast
  • 300 g rye flour
  • 150 g whole wheat flour
  • 260 ml water
  • 2 tbsp. l. Sahara
  • 1 tbsp. l. vegetable oil
  • 40 g chopped hazelnuts
  • 50 g raisins
  • 50 g chopped dried apricots
  • 50 g chopped prunes

Knead the dough from yeast, 100 g flour, sugar and 100 ml water. You can knead the dough on the "PIZZA" mode and turn off the bread maker after 1 batch. Leave the dough to rise in the bread maker for 1-1.5 hours. Coarsely chop the nuts, chop dried apricots and prunes, mix everything with raisins. Add the remaining flour and water, cereal, oil to the risen dough. Run the batch for 2-3 minutes. Place the dough in a bowl and stir in the dried fruits and nuts with your hands. Return the dough to the bread maker, heat it for 1 minute on the "BAKING" mode. Leave to rise for 2 hours. Please note that the rye dough does not rise very much. Then turn on the "BAKE" mode for 50 minutes.
